This flagship Chardonnay of the esteemed Paul Hobbs winery was aged 11 months in French oak barrel prior to being bottled unfined and unfiltered. The result is a gorgeous wine reminiscent of a fine Puligny-Montrachet. It is pale gold in color with creamy orange, lime and nectarine aromas and hints of hibiscus and lily. On the palate, the wine has abundant flavors of golden apple, fig and tangerine, with a drizzle of butter and pear on the mid-palate. These flavors are balanced with mild, yielding acidity and a crisp minerality on the lengthy finish. Full-bodied and elegant, this well-rounded Chardonnay is sumptuous with fatty fish, full-flavored cheeses, roast fowl or like dishes.
