2004 Château Cabezac Minervois White “Les Capitelles”

Château Cabezac is located about 20 km north-west of Narbonne in the Pyrenees. It is a relatively young winery in a region that is growing by leaps and bounds, and they produce many cuvées that PJ’s is proud to carry. All of Cabezac’s wines are produced with the philosophy of “Culture Raisonnée” (responsible cultivation), which is a mix of different techniques used in the organic, biodynamic and biologic methods in order to minimize the use of chemicals, with maximum emphasis on the natural culture of the vine, the character of the varieties and of the terroir to create optimum results at the winery and in your glass.
Les Capitelles is made from some of the finest vineyard sites that Château Cabezac possesses in the Garrigots and Belvéze terroirs that are located in the very heart of Minervois. This extremely low yielding white blend of Maccabeu, Bourboulenc and Roussanne is lightly oaked by maturing 20% of the wine in barrels for 5 months. This is a fresh and elegant expression of the appellation and a welcome addition to any sunny summer barbecue.
Pale yellow in the glass with green hues and a dense floral nose. The palate offers hints of eucalyptus, buttered toast, gooseberries, fig paste, and beeswax. This a highly complex and very drinkable wine comes at an extraordinary price. Serve with skate, pasta primavera, garden salads, grilled chicken dishes, Dover sole, salmon or cod.
