Vouvray is made exclusively from Chenin Blanc and it is made in a range of styles depending on the vineyard and vintage conditions. In October and early November, Domaine Huets grapes are harvested manually in two or three ‘tries (passages through the vineyard). The grape bunches are pressed intact, and great care is taken that they are pressed gently; fermentation takes place in a mix of large and small oak barrels and larger stainless steel tanks. Natural yeasts are used along with those present in the winery. The Domaine never employs cultured yeasts. Almost all the wines have some residual sugar, and range from virtually dry to fully sweet. A light filtration is practiced before bottling. This Chenin Blanc is very fresh with bright white fruit scents and deep mineral notes on the nose. The palate opens with round pear and warm peach compote flavors followed by a hint of melon before layered mineral component appears. The wines cool mineral flavors are offset by a hint of mint and strains of lively, integrated acidity. This is a lithe and very elegant Chenin Blanc with a good, broad presence on the palate, capped by a long finish.
