Wine of the Week Profile 04/20/09

2008 Bieler Pere Et Fils
Coteaux d'Aix “Sabine”

Bieler’08 Bieler Pere Et Fils Coteaux d'Aix “Sabine” $8.99

Now that spring is in full effect we highly recommend you explore our blossoming selection of dry rosé wines. Rosés are not only refreshing, but also highly versatile and hearty enough to pair with a wide array of spring and summer-themed entrees, from salads and seafood to a range of chicken dishes.

The Bieler Père et Fils “Sabine” is created in Provence, an ideal location for growing grapes and the go-to spot for refreshing rosés. This wine was hand-crafted by winemaker Charles Bieler, who has been turning out consistently high-quality cuvées at Château Routas for more than a decade.

Sabine is a blend of 60% Syrah, 30% Grenache, and 10% Cinsault. The grapes were harvested in mid-September and three days after the grapes were pressed the skins were taken from the vats-leaving a trace of the skin's color and the supple richness suggestive of a red wine-giving this stellar cuvee its calling color. Because the tannins and color in red wine comes from the grapes' skin, the short term contact with the skins adds only part of the color and richness of a red wine. The lack of tannins allows the wine to be released young, like a vibrant and crisp white wine.

This rosé is a beautiful salmon color. The wine shimmers in the glass with aromas of juicy watermelon flesh, rose hips and fresh strawberries; these scents carry over into the flavors possessing the evocative palate. The mouth feel of this gem is round and soft with bright, apple like acidity on the finish. While traditional Provence rosés tend toward a leaner profile, Sabine is blended for a more generous mid-palate and softer finish.
