There is a power and a density in Napa wines that you won't find in any other region, or at least not on quite the same level. But wine with power is nothing without balance and structure, something the 2008 Chappellet "Signature" has in spades. No question, this is a big wine-dark chocolate, espresso beans, and black fruits dominate. The depth here is intense, but the tannins add an architecture that holds on to your mouth and demands pairings of steaks, chops, and all things bloody. The 2008 Cabernet Sauvignon Signature is a gorgeous, mid-weight wine laced with sweet dark plums, black cherries, menthol, tobacco and flowers. This gracious Cabernet Sauvignon-based red possesses lovely balance in an understated style. It should drink well for the next 5-7 years, perhaps longer.
