This is an intense Chenin Blanc from 75 year-old vines that has enough vibrancy to be aged a decade or more. It has a yeasty fresh baked baguette edge to it that is reminiscent of fine vintage Champagne. It's also got a ton of refreshing minerality, limestone, chalk, and flint, and a bracing acidity that tells you it's ready for a cheese course of tart goat cheese, Manchego with truffle honey, and Tomme des Pyrénées. - PJ
