The "Dom Chev" falls firmly in the latter, Sure it's got that 'please drink me' lovely red fruit goodness, but the concrete fermentation and organic practice (the estate will be officially certified in late 2011) adds a level of purity that demands gulping. You want bistro wine? You got bistro wine. This screams gimme some steak frites or that roasted chicken with it skin so crispy it shatters when you stick your fork in.
