As Nicolas Joly says, Chenin Blanc can either be a "genius or a terrorist". Well the Careme is a genius, or perhaps a genius terroirisist…sorry. But seriously, this wine translates the soil, translates the place, and translates the grape, which as Joly point out can be all over the place in terms of expression. Here animal fur mixes with bright apples, pear and cheese rind. It's nothing short of mesmerizing as each sip seems to express something new and un-expected. But there's also a lovely fruit and yeast quality here, with the savory and fruity notes bouncing off each other like a jazz riff. This with something like French onion soup, or just some cheese and bread, should be fantastic and a step outside your ordinary white wine experience. - PJ
